It is a lighter process than full polishing: fine abrasives, a re-polish and buff, and re-sealing, without the heavy grinding stage.
Granite's hardness means it holds a polish for years, but also that restoring it needs finer, harder diamond abrasives than marble and more passes to lift the shine. Its porosity varies hugely by variety — some black granites are nearly sealed by nature, some light ones drink oil — so sealer choice matters.
